Description

Sausage Stuffed Zucchini Boats are packed with flavor and are easy to prepare. Stuffed with savory sausage, fresh zucchini, marinara sauce, and topped with melted mozzarella, this dish is a tasty and healthy option for a quick dinner.


Ingredients

  • 3 medium zucchini
  • 1 lb ground italian sausage
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, as needed

Instructions

  1. Preheat your oven to 375°F and line a large baking pan with foil or parchment paper.
  2. Cut the zucchini in half lengthwise and use a spoon to scoop out the insides, roughly chopping the flesh and setting it aside.
  3. In a large skillet over medium-high heat, cook the ground sausage for about 3-4 minutes until browned.
  4. Add the chopped onion, minced garlic, and chopped zucchini to the skillet; cook for another 3-4 minutes until the sausage is cooked through and the veggies are softened.
  5. Stir in the marinara sauce to combine.
  6. Place the hollowed-out zucchini boats on the baking pan and sprinkle with salt and pepper; fill each boat with the sausage mixture, then top with mozzarella cheese.
  7. Bake for 15-20 minutes until the cheese is melted and bubbly, checking to ensure the zucchini is tender before serving.
  8. Serve hot and enjoy, storing leftovers in the fridge.

Notes

Feel free to use any type of sausage according to your preference—mild or hot.
