- 3 medium zucchini
- 1 lb ground italian sausage
- ½ onion, chopped
- 2 garlic cloves, minced
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper, as needed
Instructions
- Preheat your oven to 375°F and line a large baking pan with foil or parchment paper.
- Cut the zucchini in half lengthwise and use a spoon to scoop out the insides, roughly chopping the flesh and setting it aside.
- In a large skillet over medium-high heat, cook the ground sausage for about 3-4 minutes until browned.
- Add the chopped onion, minced garlic, and chopped zucchini to the skillet; cook for another 3-4 minutes until the sausage is cooked through and the veggies are softened.
- Stir in the marinara sauce to combine.
- Place the hollowed-out zucchini boats on the baking pan and sprinkle with salt and pepper; fill each boat with the sausage mixture, then top with mozzarella cheese.
- Bake for 15-20 minutes until the cheese is melted and bubbly, checking to ensure the zucchini is tender before serving.
- Serve hot and enjoy, storing leftovers in the fridge.
