Ingredients
Scale
- 2 tablespoons ghee or oil, divided
- 4 oz baby red potatoes quartered
- Potato seasonings – sea salt, black pepper, smoked paprika, garlic powder, chili powder
- 1 handful chopped kale + 1 tablespoon water
- 3–4 oz ground pork sausage or any ground meat
- 1 large egg
- 1/4–1/2 avocado sliced, plus lime juice and sea salt
- Scallions thinly sliced
- Fresh salsa
Instructions
- In a microwave-safe bowl, place the quartered potatoes and heat on high for 3 minutes to soften them.
- Heat a medium skillet over medium-high heat and add the ghee or oil. Add the softened potatoes and season lightly with all the potato seasonings.
- Fry the potatoes for approximately 3 minutes until browned and crispy. Use a slotted spoon to transfer them to a bowl and keep warm with aluminum foil.
- Add a bit more ghee into the skillet, followed by the chopped kale and water. Cover to wilt the kale, then uncover and stir until the kale reaches your desired consistency. Season with sea salt and pepper before adding it to the bowl with the potatoes.
- In the same skillet, add the ground sausage or meat. Cook until browned, which should take about 2 minutes. Transfer this to the bowl as well and cover to keep everything warm.
- Adjust the heat to medium and add the remaining tablespoon of ghee to the skillet. Fry the egg to your preference, spooning some ghee over the egg or flipping it if desired.
- Once cooked, add the fried egg to the bowl and top with the sliced avocado drizzled with lime juice and a sprinkle of sea salt. Finish with sliced scallions and fresh salsa. Serve immediately and enjoy.
