Description

Sheet Pan Salmon delivers mouthwatering flavors with minimal effort. This dish features tender salmon fillets paired with roasted green beans and grape tomatoes, making it the ideal choice for a healthy and quick meal. Enjoy a delightful dinner full of freshness and zest!


Ingredients

  • 4 salmon fillets
  • Salt and pepper
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • Zest ½ lemon
  • Juice 1 lemon, approx. 2 tbsp
  • 1 ½ tsp oregano
  • 1 tsp paprika
  • 12 oz green beans, larger ones cut in half
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, oregano, and paprika to create the marinade.
  3. Put the green beans into a bowl, drizzle with 1 tablespoon of the marinade, and toss to combine. Spread the green beans on the baking sheet and roast for 5 minutes.
  4. Remove the baking sheet from the oven, add the halved tomatoes with 1 tablespoon of marinade, and toss to combine.
  5. Push the vegetables to the sides and position the salmon fillets in the middle of the baking sheet. Season the salmon with salt and pepper, then brush the remaining marinade over the fillets.
  6. Return the baking sheet to the oven and bake for 10-12 minutes. Switch the oven to broil and broil for an additional 2-3 minutes until salmon is cooked through. Enjoy!
  7. OPTIONAL: Before serving, sprinkle feta cheese and fresh herbs like parsley or dill over the salmon.

Notes

Feel free to substitute lemon with lime for a different citrus flavor.
Adding feta cheese before serving enhances the dish with a savory touch.
Using assorted vegetables such as zucchini or bell peppers can add variety.
