- 3/4 cup cherry tomatoes halved
- 1 ripe avocado
- 5 oz baby spinach or your favorite salad greens
- chives or scallions thinly sliced for garnish

- Blend lemon juice, mustard, garlic, sea salt, pepper, and olive oil in a tall container using an immersion blender or conventional blender until creamy.
- Prep all ingredients in advance, ensuring bacon is cooked and crumbled before starting preparation.
