Description

This Simple Peach Crisp with Oat Topping combines succulent peaches and a crunchy oatmeal topping for a delightful dessert. It’s easy to prepare and a comforting treat for any occasion!


Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a pie pan with non-stick spray.
  2. Pit, peel, and slice enough peaches to measure 5 cups, then place them in a medium-sized bowl.
  3. Mix in sugar, cornstarch, vanilla, and lemon juice with the peaches until well combined.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, combine flour, brown sugar, and cinnamon, pulsing until mixed. Add the cold cubed butter and pulse until crumbly. Gently mix in old-fashioned rolled oats.
  6. Sprinkle the oat mixture evenly over the peaches in the pan.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown.

Notes

For extra flavor, consider adding nuts to the oat topping.
Serve warm with a scoop of vanilla ice cream for a delicious dessert.
You can substitute other fruits like apples or berries if desired.
