- 5 cups peaches, sliced
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1/2 tsp vanilla
- 1 tbsp lemon juice
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup butter, cold & cubed
- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and spray a pie pan with non-stick spray.
- Pit, peel, and slice enough peaches to measure 5 cups, then place them in a medium-sized bowl.
- Mix in sugar, cornstarch, vanilla, and lemon juice with the peaches until well combined.
- Transfer the peach mixture into the prepared pie pan.
- In a food processor, combine flour, brown sugar, and cinnamon, pulsing until mixed. Add the cold cubed butter and pulse until crumbly. Gently mix in old-fashioned rolled oats.
- Sprinkle the oat mixture evenly over the peaches in the pan.
- Bake for 30 to 35 minutes, or until the topping is golden brown.
Notes
For extra flavor, consider adding nuts to the oat topping.
Serve warm with a scoop of vanilla ice cream for a delicious dessert.
You can substitute other fruits like apples or berries if desired.
