- 1½ pounds chicken breasts
- 1/4 cup avocado oil
- 3 tablespoons lime juice
- 1 tablespoon garlic, minced
- 2 tablespoons light brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne powder
- 1 chili in adobo sauce, seeds removed and minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 whole lime
Instructions
- Trim any excess fat or tendons from the chicken breasts. Place them in a freezer bag or between two sheets of plastic wrap.
- Using a meat tenderizer, rolling pin, or mason jar bottom, pound the thick parts of the chicken to tenderize.
- In a small bowl, mix together the avocado oil, lime juice, minced garlic, light brown sugar, chili powder, cumin, cayenne powder, and minced chili in adobo sauce until well combined.
- Pour the marinade over the chicken in the freezer bag or a large mixing bowl, ensuring all sides are evenly coated.
- Seal the bag or cover the bowl and refrigerate for a minimum of 2 hours, or up to 24 hours for more flavor.
Notes
For best results, allow the chicken to marinate overnight.
Serve with rice or a fresh salad for a complete meal.
