Description

These Southwest Chicken Breasts are bursting with flavor thanks to a zesty marinade made from fresh lime, spices, and avocado oil. Perfect for a quick dinner or a healthy meal, this recipe is simple to make and sure to become a favorite!


Ingredients

  • pounds chicken breasts
  • 1/4 cup avocado oil
  • 3 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • 2 tablespoons light brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne powder
  • 1 chili in adobo sauce, seeds removed and minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lime

Instructions

  1. Trim any excess fat or tendons from the chicken breasts. Place them in a freezer bag or between two sheets of plastic wrap.
  2. Using a meat tenderizer, rolling pin, or mason jar bottom, pound the thick parts of the chicken to tenderize.
  3. In a small bowl, mix together the avocado oil, lime juice, minced garlic, light brown sugar, chili powder, cumin, cayenne powder, and minced chili in adobo sauce until well combined.
  4. Pour the marinade over the chicken in the freezer bag or a large mixing bowl, ensuring all sides are evenly coated.
  5. Seal the bag or cover the bowl and refrigerate for a minimum of 2 hours, or up to 24 hours for more flavor.

Notes

For best results, allow the chicken to marinate overnight.
Serve with rice or a fresh salad for a complete meal.
Adjust cayenne pepper for desired spice level.
