Description

These Strawberries and Cream Cookies boast an irresistible flavor with a delightful blend of strawberries and white chocolate. With simple ingredients and an easy prep, they are perfect for any occasion, whether it’s a cozy night in or sharing with friends.


Ingredients

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 and 1/4 cups granulated sugar
  • 1/4 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 11 ounces white chocolate chips
  • 2 bags freeze-dried strawberries (68 g)

Instructions

  1. Preheat the oven to 325°F. Line two large baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a stand mixer or using a handheld mixer, combine the butter and both sugars. Beat on medium speed for about 3 minutes until light and fluffy, scraping down the bowl as needed. Then, beat in the vanilla extract.
  4. Reduce the mixer speed to medium-low and add the eggs one at a time, beating well after each addition and scraping the bowl as needed.
  5. Lower the mixer speed to low and add in the flour mixture, beating until just combined. Mix in the white chocolate chips and dried strawberries until evenly incorporated.
  6. Use a large cookie scoop to scoop 3 tablespoons of dough, roll it into a ball, and place it on the prepared baking sheet with the side showcasing the most chocolate and strawberries facing up. Leave 2 inches between each cookie.
  7. Bake one sheet at a time for 12 to 13 minutes until golden at the edges but soft in the center.
  8. Remove from the oven and, using a spatula, tuck in any uneven edges to create a round cookie shape. Optionally, press extra white chocolate chips on top.
  9. Cool the cookies on the baking sheet for 20 minutes on a wire rack before serving.

Notes

Ensure your butter is at room temperature for easy mixing.
Using freeze-dried strawberries is key to achieving the best flavor without adding excess moisture.
For a more intense strawberry flavor, consider adding additional freeze-dried fruit.
