These Strawberry Crunch Cheesecake Brownies combine velvety cheesecake with a delicious strawberry brownie base and a crunchy Oreo topping. Perfect for a sweet treat!

- 1 (8 oz) cream cheese, softened
- 1/4 cup butter, softened
- 1 tsp vanilla
- 1/2 cup powdered sugar
- 1–2 tbsp heavy whipping cream
- 20 golden oreos, about 1/2 package
- 4 tbsp butter, melted
- 4 tbsp strawberry jello gelatin, remaining
- 1 box strawberry cake mix
- 1/2 cup butter, melted
- 2 eggs
- 2 tbsp strawberry jello gelatin
Instructions
- Preheat the oven to 350 degrees. Spray an 8 x 8 pan with non-stick spray and set aside.
- In a large bowl, prepare the brownie layer by mixing strawberry cake mix, melted butter, eggs, and strawberry gelatin.
- Spread the batter into the prepared pan and bake for 25 minutes. Allow to cool completely.
- Once the brownie layer is cooled, make the cheesecake layer by beating together softened cream cheese, softened butter, and vanilla until smooth. Gradually beat in powdered sugar and heavy whipping cream until fluffy.
- Spread the cream cheese mixture evenly over the cooled brownies.
- In a food processor, pulse the Oreos until broken into small pieces, leaving some larger chunks.
- Sprinkle the remaining strawberry gelatin over the cookie crumbs and drizzle with melted butter, then pulse until combined.
- Sprinkle and press the cookie crumb mixture over and into the cheesecake layer.
Notes
Cool brownies completely before adding cheesecake layer for best results.
Drizzle some extra melted butter over the cookie crumbs for an enhanced flavor.
Store any leftovers in an airtight container in the refrigerator.
