Description

These Sugar Cookie Fruit Pizzas are a delightful treat featuring a soft sugar cookie base, creamy frosting, and topped with fresh fruit. Perfect for gatherings or a sweet snack, they are easy to make and bursting with flavor!


Ingredients

  • 1 cup (227 g) salted butter
  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line 2 baking sheets with parchment paper.
  2. In a stand mixer with a paddle attachment, combine butter and sugar. Beat on medium-high speed until light and fluffy, about 3 minutes. Add the egg, egg yolk, vanilla, and almond extract, mixing on low speed until smooth, approximately 30 seconds.
  3. Gradually incorporate baking soda, salt, and flour into the mixture.
  4. Use a ¼ cup cookie scoop to form large balls of dough and place them on the lined baking sheet, spacing them apart.
  5. Bake the cookies for 11-14 minutes until the edges are light golden brown and the tops are slightly cracked. Avoid overbaking to maintain chewiness.
  6. In a bowl, beat together cream cheese and 2 tablespoons butter until smooth. Mix in vanilla, a pinch of salt, and powdered sugar until completely combined.
  7. Chop fresh fruit into small pieces and set aside for topping the cookies.

Notes

Ensure the butter and cream cheese are at room temperature for easy mixing.
You can use any combination of fresh fruits like strawberries, blueberries, or kiwi for toppings.
