This Tiramisu Cake is an amazing dessert that combines rich flavors of coffee and cream. With simple ingredients like eggs, mascarpone, and cocoa, it’s perfect for any occasion.

- 6 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese (room temperature)
- 4 ounces mascarpone cheese (cold)
- 1 cup butter (room temperature (2 sticks))
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F. Grease the bottom of three 6-inch round cake pans with nonstick spray, and line with parchment paper.
- In a mixer bowl, combine eggs and beat on medium-high adding granulated sugar gradually until the mixture is at ‘ribbon stage’, about 5-8 minutes.
- Sift flour, baking powder, and cinnamon into the egg mixture and gently fold to combine without deflating the mixture.
- Divide batter among prepared pans and bake for 15-18 minutes or until a toothpick comes out clean.
- Cool the cakes in the pan for 10 minutes, then turn onto a wire rack to cool completely.
- Optionally, wrap cooled layers in plastic and freeze for at least 4 hours before frosting.
- For the frosting, beat together cream cheese, mascarpone, and butter until smooth. Gradually add powdered sugar while mixing on low speed and scrape down the sides as needed.
- Add vanilla and beat on high for 2-3 minutes until fluffy.
- Assemble the cake by brushing cooled layers with espresso; layer frosting between them, topping off with frosting on top and sides of the cake.
- Decorate the top with remaining frosting, if desired, and sift cocoa powder over the cake.
- Cover loosely with plastic wrap and refrigerate for at least 4 hours before serving.
Notes
Freezing the cake layers helps with frosting and texture before assembly.
Make sure all dairy products are at room temperature for best mixing results.
Use freshly brewed espresso for a more intense coffee flavor.
