Description

This Tomato Miso Soup with Garlic Sesame Mushrooms is a simple yet flavorful dish combining fresh ingredients for a quick, healthy meal. Experience umami with every spoonful!


Ingredients

  • 8 oz shiitake mushrooms, stems removed and thinly sliced
  • 1 tbsp sesame seeds
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Juice of half a lemon
  • 1 cup cherry tomatoes, halved
  • 3 scallions, thinly sliced, whites and green portions separated
  • 1 ear of corn, kernels cut away from the cob
  • 4 cups hot water
  • 2 dry shiitake mushrooms
  • 2–3 tbsp yellow miso paste
  • 11 oz soft tofu, sliced into rounds or cubed
  • Sesame oil, for serving (optional)
  • Cooked rice, for serving (optional)

Instructions

  1. Preheat the oven to 425°F. In a bowl, combine the shiitake mushrooms, sesame seeds, garlic powder, onion powder, 1 tablespoon avocado oil, and a pinch of salt. Toss to coat and spread evenly on a baking sheet. Bake for 15 minutes, then toss and bake for another 5-10 minutes until browned and crispy. Squeeze lemon juice over mushrooms and toss again.
  2. In a large saucepan, heat the remaining tablespoon of avocado oil over medium-low heat. Add the cherry tomatoes with a pinch of salt and sauté for about 5 minutes until the tomatoes start to break down and release their juices.
  3. Add the scallions and corn to the pan with the tomatoes, sauté for an additional 2-3 minutes.
  4. Pour in 3 1/2 cups of water and add the dried shiitake mushrooms. Stir and bring to a boil, then reduce to a low simmer and cook for 10 minutes. Gently add the tofu and warm through for 3-5 minutes.
  5. In a small bowl, combine the remaining 1/2 cup water and miso paste, whisk until smooth. Remove the dried mushrooms from the soup, cut the heat, and stir in the miso mixture.
  6. Drizzle a teaspoon of sesame oil into the soup, adjusting salt/miso to your taste. Ladle the soup into bowls topped with roasted mushrooms and a squeeze of lemon. Serve with rice if desired.

Notes

For extra flavor, let the roasted mushrooms cool slightly before serving them on top of the soup.
Feel free to customize the soup by adding your favorite vegetables or protein sources.
Adjust the amount of miso to suit your taste preferences.
