Description

This Tortellini Pasta Salad bursts with flavor, featuring cheese tortellini, savory salami, fresh veggies, and a delightful dressing. It’s a quick and satisfying meal suitable for gatherings or an easy family dinner.


Ingredients

  • 1 (20-oz) bag refrigerated cheese tortellini
  • 1 cup italian dressing
  • 1 (8-oz) package sliced hard salami (chopped)
  • 1 (8-oz) container mozzarella pearls (drained)
  • 1 (6-oz) can sliced black olives (drained)
  • 1 red bell pepper (cleaned and chopped)
  • 1 (10-oz) container cherry tomatoes (halved)
  • ¼ small red onion (thinly sliced)
  • ½ cup shredded parmesan cheese
  • ½ cup fresh basil leaves (thinly sliced)

Instructions

  1. Prepare a large salad bowl for tossing the ingredients without spilling.
  2. Cook the tortellini according to package instructions. Drain and rinse under cold water, then drain again thoroughly.
  3. In the large salad bowl, mix the drained tortellini with ½ cup of the dressing. Set aside.
  4. While the tortellini is soaking in the dressing, prepare the remaining ingredients and add them to the bowl with the tortellini, but don’t mix yet.
  5. Add the remaining ½ cup of dressing to the salad. Toss everything together well.
  6. Cover and refrigerate the salad for 30-60 minutes before serving. Toss again before serving, adding extra dressing or olive oil if needed. Garnish with additional basil and parmesan if desired.

Notes

For a lighter option, use a reduced-fat Italian dressing.
Feel free to add additional vegetables like spinach or cucumbers for extra crunch.
This salad can be made a day ahead for even better flavor; just keep it covered in the refrigerator.
