These Carmelitas are a delightful treat with layers of chocolate chip cookie dough, luscious caramel, and semi-sweet chocolate chips. This easy recipe makes for a perfect crowd-pleaser at parties or a sweet reward after dinner.

- 30 ounces chocolate chip cookie dough refrigerated, store-bought dough, or homemade
- 11 ounces caramels
- ¼ cup evaporated milk
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F.
- Slice a little more than half of the cookie dough into 1/4" rounds and arrange them in a single layer on a parchment-lined 9-inch square baking pan.
- Use your fingers to press the dough into a solid and even layer.
- Bake for 20 to 25 minutes or until golden brown. Remove from the oven and let it cool slightly.
- In a microwave-safe container, combine unwrapped caramels and evaporated milk. Heat on high for 1 minute, then stir. Continue to heat in 30-second intervals until the caramel is fully melted.
- Sprinkle chocolate chips over the slightly cooled cookie crust.
- Drizzle the melted caramel over the chocolate chips.
- Crumble the remaining cookie dough over the top of the caramel, although it doesn’t need to be perfect.
- Return the baking pan to the oven and bake for another 12-15 minutes until just beginning to turn golden brown.
- Allow to cool to room temperature, then refrigerate for at least 2 hours.
- Let sit out for 15 minutes before cutting and serving.
Notes
To make slicing easier, let them cool completely before cutting.
Store leftovers in an airtight container to maintain freshness.
Feel free to add nuts or other mix-ins for a personalized touch.
