- ⅔ cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup butter, cold
- 1 egg, whisked
- 2 tbsp milk
- 4 plums, diced small
- ¼ cup sugar
- 2 tbsp all purpose flour
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 400° F and line an 8×8 baking dish with parchment paper.
- In a large bowl, mix flour, sugar, baking powder, and salt. Grate the cold butter directly into this mixture.
- Combine until the butter resembles small pebbles, then add the whisked egg and milk, mixing until combined.
- In another bowl, mix diced plums with sugar, flour, and vanilla, stirring until well combined.
- Press ⅔ of the crust mixture into the prepared baking pan using your hands.
- Spread the plum mixture evenly over the crust, then sprinkle the remaining crust mixture on top.
- Bake for 30-32 minutes until the edges are golden brown. Let cool, slice, and enjoy!
Notes
For a richer flavor, consider using brown sugar in place of regular sugar.
